Smores Sunday
INGREDIENTS:
6 mini graham cracker crusts
1 Gallon vanilla ice cream
1 bag 16 oz bag of marshmallows
chocolate chips

DIRECTIONS:
take your mini graham crusts and put a nice round scoop of vanilla ice cream in each one. then put your marshmallows into the ice cream and cover as much of it as you can.  Place the six mini dishes in the freezer to set for at least an hour.  right before you are ready to serve them preheat your oven's broiler.  also melt your chocolate chips (either using a double boiler or in the microwave).  place your mini dishes in the oven, and watch them! in just a minute or so the marshmallows will brown, then quickly take them out and drizzle the chocolate on top and serve!


Spinach Mango Chicken Salad


INGREDIENTS:
2 cups raw baby leaf spinach
1/4 cup mango sliced
1/4 cup sliced or chopped grilled chicken
1/8 cup of almond slivers
Oil and Vinegar dressing

DIRECTIONS:
Mix all ingredients together and enjoy! I recommend using Newman's Own Olive Oil and Vinegar dressing.  Also if you are short on time, you can always use canned mango slices and frozen precooked grilled chicken slices.


Spinach Club Salad
INGREDIENTS:
2 cups of raw baby leaf spinach
1/2 hard boiled egg
1 piece of cooked turkey bacon chopped
1/4 cup sliced or chopped grilled chicken
1/8 cup roma tomato chopped
1/8 cup onion chopped
1/4 cup cheese
Croutons
Catalina or Thousand Island dressing

DIRECTIONS:
Mix all ingredients together and enjoy! Pre cooked frozen grilled chicken is an easy way to prepare the chicken for this salad.
